Thanksgiving and all of the upcoming Holidays are times for reflecting on all of the good things in our lives. For brides to be and young couples beginning a new life together, the Holidays is an opportunity to combine family customs and to develop new customs of their own.
I would like to share with you one of my favorite Thanksgiving recipes. I call it Cranberry relish.
You will need the following ingredients:
- 1 pound of fresh or frozen cranberries
- 1 large navel orange or canned Mandarin oranges
- 1/2-1 cup of Honey
Just cover the cranberries with water and cook until the berries pop. Continue cooking, adding honey to taste, starting with 1/2 cup. Peel and section a seedless orange, and slice the sections into small chunks, adding them to the berry mix. You may substitute Mandarin oranges if you prefer. Cook the mixture until the sauce thickens to your own taste, about 1/2 hour. Chill prior to serving it.
